The Ultimate Sausage Egg Breakfast Muffin

Whats in it…

1 x 400g pack of skinned Powters sausages (any variety but we prefer Newmarket Pig best) or our Chefs’ Pig Sausage meat.

oil for frying

Free range eggs x 4

english muffins  x 4, halved and lightly toasted

How to make it…

1 Place the sausage meat on a clean plate or board and divide into 4 and shape into roughly 1cm-thick patties

2 Heat a large frying pan over medium heat and with a little oil fry the patties for 8-10 minutes on each side until golden and cooked through. Remove from the pan and keep warm in the oven on low. Turn up the heat, add some more oil, crack in the eggs and fry (seasoning on top if desired).

3 Place each patty onto one half of the toasted muffin, top with a fried egg, add your favourite sauce and enjoy!
