Newmarket Pig BBQ Flatbreads with Garlic Dressing

What you’ll need…

  • 6 (or more) Newmarket Pig Sausages

  • 4 Flat breads (we love the Crosta & Mollica flatbreads which you can find in Waitrose) or pitta breads if you can’t find these

  • Pea shoots & Wild rocket salad leaves

  • Some side dishes to accompany them such as Coleslaw, Red Cabbage Slaw, BBQ’d Courgettes or Sweetcorn

 

 

For the dressing –

  • 100g Greek yoghurt

  • 1 tbsp lemon juice

  • 1 clove of garlic, grated

  • 1 tbsp chives, finely chopped

  • Salt and pepper to taste

METHOD

  1. Preheat your BBQ, if cooking on coals heap these to one side to allow a cooler temperature to gently cook the sausages.

  2. Take the sausages out of the fridge 10 minutes before cooking to allow to rise to room temperature, place on the BBQ with a little oil and turn frequently until cooked thoroughly and nicely charred.

  3. To make the garlic dressing, mix all ingredients together and set aside.

  4. Gently warm the flat breads on the grill for a few seconds each side, slice the sausages and serve.

  5. Serve with some sides such as coleslaw, red cabbage slaw, bbq’d sweetcorn and courgettes
